I get in dinner ruts allllll the time. The problem is mostly rooted in the fact that I don’t enjoy cooking. I’ve never been very good at it and so it just feels like a chore. So, when I find something that’s really, really good (even with all my attempts to mess it up) it’s a keeper.
All five of these recipes were ones that I have found on Pinterest and are on my “eat” board. When I get in one of my ruts that’s the first place I go to find something new and interesting. These have all been in rotation lately.

I made this one last night. In true Shelley fashion I managed to leave out two major ingredients (Greek yogurt and the Monterey jack cheese) and it still turn out super yummy. In my defense, I’m coming down with something and feeling super crappy, hence the lack of full brain capacity. But, the Greek yogurt and jack cheese sends it over-the-top-knock-your-socks-off-good so don’t forget it.
The goat cheese makes the orzo insanely creamy and yummy. I could shovel this stuff in my face all day, every day.

This one is so quick and easy, but tastes like you spent a lot of time on it. Done and done!

I have developed a love of chorizo since moving to Texas. This gives me my fix. Instead of making quesadillas like the recipe suggests, I make mine taco style with soft flour tortillas. I lay the tortillas on the skillet letting them brown while layering shredded cheese, the chorizo and pepper mixture, and then avocado chunks and feta. Once the tortilla is nice and brown I pull it off and fold it up. So good.

Whenever you want rice to go with your Mexican meal, this is it. So simple and so good. I want some now.
