superstar chicken piccata

Ok guys, I have a recipe for chicken piccata that I LOVE and makes me feel like a superstar in the kitchen.  This is a rare feeling for me so I thought I’d share it with you 😉
Ingredients:
2 boneless skinless chicken breast halves
2 tablespoons butter, room temp
1 1/2 tablespoons all purpose flour
Additional all purpose flour for coating chicken (I used approx. 1/3 cup)
1 tablespoon olive oil
2 tablespoons lemon juice (I use the 100% juice in a bottle)
1/3 cup dry white wine (I used a Chardonnay)
1/2 cup low-salt chicken broth
1/4 cup drained capers
1/4 cup chopped fresh parsley
Salt & pepper
Cooked fettuccine noodles or pasta of choice
Here we go!
In small bowl mix 1 1/2 tablespoons flour with 1 tablespoon butter and set aside.
For the chicken you can prep it a couple of different ways.  1) You can place it between sheets of plastic wrap and pound it to 1/2-1/4 inch thickness, or 2) you can slice it half so you have two thin pieces instead of one thick.  For simplicity, I prefer to just slice mine in half. 
Season chicken with salt and pepper.  Place 1/3 cup flour in a large bowl or baking dish and dip the seasoned chicken in the flour. Discard leftover flour.
Heat olive oil in large skillet and add chicken breasts.  Cook until cooked through and nicely browned on both sides.  When done, transfer chicken to a plate and cover with foil to keep warm.
In same skillet you cooked the chicken in, add wine, lemon juice and broth.  Bring to a boil – medium/high heat.  Whisk in the butter and flour mixture and continue to boil until sauce starts to thicken.  Stir in capers, parsley, and last tablespoon of butter. 
Place pasta in bowl, top with chicken and then add sauce.  Enjoy!
